I made these for dinner last night. Maybe next time I'll flash a picture...
Ground Beef Enchiladas
1 onion diced
1 celery stalk diced
½ small red bell pepper diced
1 small zucchini diced
1 clove garlic finely chopped
½ c. frozen white corn
½ pound ground beef
½ package taco seasoning
10-12 corn tortillas
1-2 cups grated Mexican style cheese
1 can green chili enchilada sauce
small can diced olives
Method: Preheat oven to 350. Sauté onion, celery, and red bell pepper five minutes, add zucchini and cook another three minutes, then add corn and garlic and sauté for about two more minutes. Remove all vegetables to a bowl. Fry ground turkey in a pan until browned and add powdered taco seasoning and water. Heat tortillas (I do it directly on the flame, but they can be warmed in the microwave). Add half veggies and meat to each tortilla. Place in a pan. Pour sauce over enchiladas. Top with grated cheese and olives. Bake for about twenty minutes.
